Lavender infused Cake

Pair with coffee or tea, it’s perfect.


  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup lavender infused olive oil
  • 1/2 cup milk
  • 1 tablespoon fresh lavender flowers (optional, for garnish)
  • Powdered sugar, for dusting (optional)



  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a separate large bowl, beat together the granulated sugar and eggs until light and fluffy.
  4. Gradually add the lavender infused olive oil to the egg mixture, beating until well incorporated.
  5. Alternately add the flour mixture and milk to the egg mixture, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, dust the top of the cake with powdered sugar and garnish with fresh lavender flowers, if desired.
  10. Slice and serve the cake, and enjoy the delicate flavor of lavender infused olive oil!
