Lavender infused Cake

Pair with coffee or tea, it’s perfect.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup lavender infused olive oil
- 1/2 cup milk
- 1 tablespoon fresh lavender flowers (optional, for garnish)
- Powdered sugar, for dusting (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- In a separate large bowl, beat together the granulated sugar and eggs until light and fluffy.
- Gradually add the lavender infused olive oil to the egg mixture, beating until well incorporated.
- Alternately add the flour mixture and milk to the egg mixture, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust the top of the cake with powdered sugar and garnish with fresh lavender flowers, if desired.
- Slice and serve the cake, and enjoy the delicate flavor of lavender infused olive oil!
